In addition to the classics such as shortbread cookies, Christmas cookies, the biscuit culture for afternoon coffee is largely shaped by the “Dolce Vita” of Italy. During our vacation we got to know and love the biscotti in all its facets. The most famous stars, however, are the Amarettini and Cantuccini.
The small Amarettini come from far in the north, in the Lombardy region. It is basically crispy macaroons that get their distinctive character from the amaretto. Classically, they are not only served with coffee, but also enhance many desserts.

The Cantuccini from Tuscany are just as well known and popular. Its home is not far from Florence. The very hard and dry, rustic cuts also get their aroma from amaretto and whole almonds. Unlike the Amarettini, they are baked twice, just like the German rusk, making them particularly crispy and long-lasting. Dipped into the coffee for eating, the delicious aromas combine.
Even those who still doubt their abilities are encouraged to bake the biscuits for coffee themselves. Because this is the only way to try them fresh from the oven. The right cookie recipes make baking easy. In addition, everyone can vary the ingredients slightly. Is there always too little amaretto in the cantuccini? – That can be changed. If you don’t like almonds, you can replace them with walnuts, pistachios or hazelnuts. Coffee beans or some powder are also ideal for rediscovering classics. Biscuit recipes: Cantuccini – the Italian rusks
- 300 g of flour
- 1 teaspoon Baking powder
- a pinch of salt
- 1 packet of vanilla sugar
- 200 g of sugar
- 50 g soft butter
- 100 g almonds
- 1 tbsp amaretto
- 3 eggs
Total preparation time: 75 minutes
Temperature: 180 ° C for 25 minutes and 2 times 10 minutes at 150 ° C
Flour, baking powder, vanilla sugar and salt are mixed together and sieved together. A hollow is pressed in the middle, in which the amaretto and the three eggs go. First whisk the eggs and amaretto lightly with a fork and then slowly work in the flour and softened butter. Blanch the almonds with boiling water so that the skins peel off. After coarse chopping, they can be incorporated into the flour-egg-amaretto mixture together with the sugar. This creates a firm kneading dough that is formed into three narrow rolls (15 cm long and 5 cm diameter). Place these on the baking paper and bake at 180 ° C for about 25 minutes. The still light rolls should then cool down.
Then cut the pastry, which is still soft, into approx. 1 cm wide columns. Place these again on the baking paper and let them brown on each side for 10 minutes at 150 ° C. Double baking gives the Cantuccini their characteristic consistency.
Biscuit recipes: Amarettini – the delicious little biscuits
- 1 egg white
- 100 g almonds
- 100 g sugar or powdered sugar
- a pinch of salt
- 1 tbsp amaretto
Total preparation time: 45 minutes
Temperature: 150 ° C for 20 – 30 minutes
Beat the egg white with a pinch of salt until stiff. The sugar is slowly worked into the already stiff egg white until the mass is shiny and all the sugar crystals have dissolved. Now add the amaretto and stir in as well.
Blanch the almonds with boiling water so that the shell can be peeled off and then grind finely. Then both components come together. The result is a sticky mass that is sprayed onto the baking paper with a piping bag. Traditionally they are of course small swabs, but other shapes are also allowed. Sufficient space between the amarettini is important, because they double their volume when baking. The biscuit recipe is enough for about 100 pieces.
